Black Lava Salt Dry Rub
Black lava salt, prized for its striking appearance and subtle flavour, is primarily used as a gourmet finishing salt to add visual appeal and a delicate smoky, earthy flavour to a wide range of dishes. It is often described as tasting slightly smoky, earthy, and mineral-rich, while the dominant flavour is still saltiness.
Black Cap Pudding
When it's a miserable time of year comfort food comes into its own and what can be more comforting than a steamed pud? A really old recipe is for a steamed pudding with blackcurrant jam. Called Black Cap Pudding in some parts of the country as the blackcurrant jam looks like a luscious cap over the top of the pudding when it is turned out, it was originally a thin batter pudding with currants which sank to the bottom - hence black cap - it has evolved into the sponge pudding we know today.
Easy to make and a great family pudding. It will steam away happily while the main course is being enjoyed.
